When allergies to gluten, eggs and dairy products appeared in our family, we were looking for bread which would not cause us problems, but which still tastes like the breads we were used to. We studied long lists of ingredients of bread on the market, and were astonished at many things industrially produced bread could contain. We found something unsatisfactory in each of them. When we did not find the ideal bread, we started baking it ourselves. Completely free of gluten, eggs, dairy products and chemical additives.
We started by choosing only ingredients that are naturally gluten-free. We studied professional literature, attended seminars and conferences, consulted with doctors and scientists from the Academy of Sciences. For a long time, we researched and experimented how to adapt the proven methods of the traditional bakery craft to gluten-free ingredients, from which it is not easy to prepare dough. Gradually, we really figured out a way to bake tasty and supple bread with a crispy crust, the kind we like. But we didn't want to keep the recipe to ourselves, so our Almagrana bakery was created. The first in the Czech Republic to bake vegan bread and sweet pastries without gluten, lactose, egg, in a natural and slow way.
In order not to be the only ones who can enjoy bakery products based on a natural and sustainable recipe, we decided to build a bakery inside a historic farm in Maletice. We heat the ovens with solar energy and we pack the pastries in ecological packaging without plastics, so that as little waste as possible is generated. All this with love, care and patience.
